Description:
The meat segment represents the 20 % of the total turnover of the European food and drink market, with over -Y-euro;200 billion in 2012. However, the European meat industry has found to be less competitive than other international players in the global market. This Italian company proposes a solution for meat processing that will decrease costs while improving sustainability and quality in processed meats, without requiring the use of additives. Technology offered is a High Power Ultrasounds (HPUs) based device, non-invasive and safe, that improves meat processing and preservation in an energy-saving and cost-effective way. The company´s solution consists of a HPUs equipment for brining and tenderizing different types of meat. The application of HPUs reduces the refrigeration time of tenderizing to 2 days (average time of traditional tenderizing: 20 days or more), and the brining time to 7 days (average brining time: 14 days). Final users of this device are meat processors and gourmet restaurants that will be able to improve the sustainability of their processes by decreasing processing times and energy waste, at an affordable cost for an SMEs.
The company is very small, but very specialized and flexible, it operates since 30 years in the ultrasound technology applied to different fields; it works directly with clients with the purpose to study the best solutions for their needs, and for the development of the treating plant. Besides the food sector, the company operates in the water treatment field, developing filtration membranes exploiting ultrasounds. These membranes can remove pollutants and other unwanted substances from industrial waste waters, therefore allowing their reutilization. The company is looking for a technological partner to further develop its technology. Ideal partner would be a pig farm in Europe interested in further developing and employing this technology to treat its meat. Technical cooperation agreement is sought.

Technology offered by this company, applied to meat products, can provide a reduction of 90% refrigeration time in tenderizing and 50% refrigeration time in brining greatly reducing the energy waste.
