The Portuguese SME is oriented to research and development services, sustaining its activity on the areas of yeast biotechnology and oenology, performing testing and diagnosis, relying on a team with high qualifications, with competence in oenology and viticulture, biology, agronomic, biological engineering and chemistry. The tests and diagnosis conducted allows the identification of yeast species in grapes, grape must and wine, the detection of spoilage microorganisms and the evaluation of different yeasts and fermentation conditions for a more targeted selection of yeasts, for the desired wine style. The company is able to assess the behaviour of strains in the presence of environmental stress conditions, similar to those existing during winemaking, which influence the quality of the final product. Also, is able to carry out chemical analysis of must and wine, essential to monitor the winemaking process and the final quality of the product. The SME is currently starting working in other potential application for this technology, namely to the brewing and baking industries. It is interested in establish partnerships with research institutes and universities, that may be interested in yeast biotechnology, offering their experience and expertise. The partnerships may be considered in the context of a service agreement, providing specific technology services, or a technology cooperation agreement with the aim of share resources and skills to further developments.
