Description:
Food waste due to perished ingredients is a relevant cost driver for restaurants, food distributors and manufactures. It is mainly due to sub-optimal planning of supplies that are purchased in excess versus real needs.

The reason why food-service providers are not able to optimize planning is because they lack real-time information on the consumption of their products.

Limited intelligence and data on consumption trends impact as well on the ability to support decisions on product portfolio or proposal of new products.

The use of digital menus in restaurants will be able to overcome this limitation. Every time a customer orders a new dish, the platform keep tracks of the ingredients used and the amount left in the inventory.

When an ingredient is in a situation of over-stock and approaching its expiration date, the system immediately reacts and adjusts the pricing of related preparations to influence a higher consumption. Then, to avoid the repetition of other situations of over-stock, it optimizes restock forecast based on real consumption trends, seasonality, and impact of other promotions.

The application of this process will enable restaurants to optimally utilize ingredients in inventory.

A similar situation is observable as well among food distributors and manufacturers. Their supplies are based on historical orders received from restaurants, but any fluctuation in the ordering impacts the utilization of their stocks and potentially cause food waste and unnecessary financial commitment to stocks not immediately used.

Food distributors proposing a digital menu solution to the restaurants they serve will be able to track in real-time how ingredients are consumed and use this information to better plan their supplies and forecast near-term purchases. Food suppliers will be able to predict when a restaurant needs to restock a product and prepare in advance for its delivery.
