Description:
The Spanish biotechnology company has developed a new method and system for enzyme detection in milk, thourgh anthropometric affinity biosensors. These are analytic devices obtained through combination of one or two enzymes that work as the biological recognition element, and an electrode as a physical transduction device. The biological component provides the devices with the selectivity that is lacking in the electrochemical techniques and shortens the energy barrier for the transformation of the substrate in the product. The electrode allows, then, the transduction of the electric signal generated as consequence of the enzymatic reaction.
The response measured is the intensity of the electric current created when an electrode potential is applied. The current created is correlated with the concentration of the analyte. The magnitude of the signal measured is dependent on several factors: the concentraton of the analyte, the activity of the biocatalyst, its immobilization capacity and the surface area of the electrode.
What this company proposes is an alternative method for determination of enzymes in milk: the use of sensors and biosensors with all the necessary components for measuring the particular enzyme. This methodology will allow the quantification of the active enzyme in a milk sample.
For example, in a case where there would be a need to identify the content of lactoperoxidase in milk, it would only be necessary to immobilize a redox measure. This electrode, polarized in the right potential is submerged in a support electrolyte with the enzymatic substrate (in this case H2O2). This will result, after the addition of a milk sample, in a signal intensity proportional to the enzyme content in the sample
In case it should be more satisfactory the anthropometric monitorization through the use of various fixed enzymatic reactions, in the electrochemical transducer will be immobilized all the necessary enzymes (except the target enzyme), the redox mediator as well and, if necessary, the dilution will be supplied with all the substrates and cofactors for the running of the reaction sequence involved in the working of the biosensor.
