Una universidad turca ha desarrollado un nuevo método para la detección de H2O2 en frutas y vegetales frescos/deshidratados. Por cuestiones de salud relacionadas con el uso de peróxido de hidrógeno (H2O2), la detección es crítica. El uso de H2O2 está prohibido por los riesgos para la salud dentro del ámbito de seguridad alimentaria. Este método es eficaz incluso si los productos están expuestos a manipulaciones químicas para enmascarar el peróxido de hidrógeno. La universidad busca compañías agroalimentarias o universidades interesadas en adoptar la tecnología y establecer acuerdos de licencia.

The university is open to license agreement with agrofood companies or universities willing to adopt this technology.
Description:
A Turkish university has developed a novel method for detection of H2O2 in wet/dry fruits and vegetables. The direct use of hydrogen peroxide (H2O2) on the products is prohibited in Turkey as well as in the world because it has health risks within the scope of food security. However, H2O2 can sometimes be used in wet/dry fruits and vegetables to change the product´s color, characteristics and previously approved method which focuses on detection of H2O2 can give inaccurate results when various other techniques are applied.

Similarly, H2O2 cannot be determined in products treated with H2O2 after 3 months because amount of H2O2 decreases with time. The importance of this invention is that it enhances detection of H2O2 through analyzing its effect on the cell. This method can be used for the determination of H2O2 in dried or fresh fruit and vegetables.
The university is looking for partners for license agreement.
Advantages and Innovations:
Current method is insufficient and there is necessity to develop a new method that would be robust for any
chemical treatment and would present accurate results in long period. In this new method, H2O2 is not
directly determined, but indirect detection of H2O2 has been made by analyzing its effect on the cell. H2O2
specifically is to inhibit the peroxidase enzyme present in cells. H2O2 treatment can be determined in
products by new method even if they are exposed any chemical manipulations to mask residual hydrogen
peroxide in the product.
