Una pyme polaca especializada en la producción de snacks ha desarrollado una secadora para procesamiento de frutas y vegetales, hierbas y productos cárnicos. El nuevo proceso de producción permite elaborar alimentos secos de alta calidad. El producto final es un snack o aditivo alimentario. El proceso de secado es muy rápido y solo dura de 1 a 3 minutos. Al mantener la presión baja, la temperatura de ebullición del agua se reduce considerablemente y, por lo tanto, la temperatura del producto secado es mucho menor si se compara con los métodos convencionales. La empresa ofrece la licencia a compañías de la industria alimentaria.

Description:
A Polish producer of innovative snacks invented vacuum dryer using puffed technology in fruit and vegetables processing.
The company offers license agreements for food companies interested in innovative technology.
The technology can be used for fruit, vegetables, herbs and meat products.
The final product is dried fruit, dried vegetable, dried herb or dried meat which can be used as snacks or food additives.
In conventional driers (belt, drum or chamber) the final stage of drying process, when material humidity is below 20%, is very slow (it takes up to few hours) and the temperature of the dried material is high. This has a negative impact on the quality of the dried product which loses its biologically active ingredients, especially vitamins.
In the process carried out using innovative drier, all the negative factors affecting the quality of the product are eliminated. The drying process is very fast (usually takes1-3 minutes) and additionally by maintaining low pressure the boiling temperature of water is significantly reduced and then the temperature of the dried material is much lower as compare to the conventional methods.
The company would like to widen its offer (the company also producdes puffed fruit and vegetables) and reach new markets with this technology.
Advantages and Innovations:
This procedure allows for simultaneous effecting of the described cycles in three pipes that periodically move inside the metal chamber. The drying process is carried out in one pipe, the product is stabilised in the second pipe, and the loading and unloading of material batches takes place in the third pipe. The described solution allows for optimal use of the energy generators - one set of such generators is used for heating the dried product successively in all pipes. This has a significant impact on the efficiency of the drying process carried out using just a single drier.
