A Swedish inventor with long experience in the food industry has developed a unique process and methodology (patent pending) to refine food waste with high levels of protein and dietary fibre from the food industry and to reuse this in food production. The inventor has also developed several recipes and products where the raw material from food waste is used.

The products, originating from food waste, can be used as new raw material in several different food industries, including bakeries, ready-made food production (burgers, meat balls), dairy (ice-cream) and breweries. The innovative technology makes it possible to prevent the waste from becoming rancid and oxidise and to store this waste until it can be used again.

In the first step, the focus is to refine the brewer´s grain from brewing and to reuse this in food production.

The food industry produces large quantities of waste every year. Globally this quantity surpasses several million tons of food waste. This waste can be residues from brewing beer or wine, peel from potatoes and other vegetables, skin from rice and grains etc. This food waste contains large quantities of nutrients.

Today, most food waste is, at its best, used to produce biogas or to produce animal feed. Other food waste is composted or burned. In many cases this waste is a cost for the food companies. The waste from the food industry contains a lot of nutrition that could be used to produce new food instead of producing biogas and animal feed or just burning the waste.

An example: During the brewing process around 145 million ton brewer´s grain is disposed of annually, only in the industrial countries. Dry brewer´s grain contains 27% protein and 17% fibre and one ton contains about as much protein as meat from one cow generate. To refine and reuse this waste in new food products is a good source of protein and reduces the need to produce meat. The invention has succeeded to re-use 100% of the brewer´s grain for the manufacturing of new food products.

The inventor is looking to commercialise this innovation and is offering the technology and methodology of the procedure as well as the recipes and products that can be made from food waste.

The inventor is looking for industrial partners interested in licencing the technology. The partner companies are most likely industrial food companies getting a lot of food waste in the manufacturing process.

The inventor is also looking for partnerships with companies preparing raw material to the ready-made food industry. Here, licensing the technology as well as gaining knowledge of the products and recipes, are of interest to a partner.

The objective is to spread the technology within the food industry and the Swedish inventor is therefor interested in collaborating with companies from different branches of the food industry and to, in cooperation with the partners, introduce the technology in different manufacturing areas with large amounts of food waste as well as to companies processing raw material to the ready-made food industry.

The food manufacturers can make money from the food waste instead of paying for the handling of waste. From food waste, new raw material can be produced that is made into food that can be sold.

The technology contributes to a more resource efficient society. With this technology, more food can be produced out of the same amount of original raw material.

The new raw materials can be used in a wide range of products in the food industry, such as dairy, bakery and in the brewing industry. It can also enhance meat products such as burgers and sausages.

An important difference of the now developed technology is that liquid waste can be used as well as the dry waste. This has earlier been difficult to handle for the food industry and breweries.

The technology prevent the waste from becoming rancid and oxidise and to store this waste until it can be used again.
