Description:
Broad beans or fava beans are most popular in Western Europe and are considered valuable legumes for both human and animal nutrition. Broad beans are rich in protein, complex carbohydrates, vitamins and minerals as well as low in fat therefore they make a valuable and healthy snack for balanced diet in all ages. A micro company from Latvia engaged in functional food production in collaboration with food technologists from university in Latvia has developed an innovative snack from broad beans. In order to prepare the beans for specific drying and spicing treatment the beans must be blanched. At the moment the blanching is carried out manually in several stages: firstly soaking, followed by peeling and finally separating every bean if necessary. The process is inefficient, time-consuming and therefore expensive, but presently the only possible to provide perfect shapely beans as end result. The company is looking for innovative technology consistent for functional food productions for blanching broad beans. The company is looking for commercial agreement with technical assistance.
