La empresa ha desarrollado el proceso y know-how para producir las obleas y dispone del molde específico, pero carece de los equipos técnicos y capacidad de producción. Por este motivo busca un socio industrial con esta capacidad que se encargue de preparar la masa y de la inspección visual de los productos. Como materias primas se utilizarán huevos y mantequilla de alta calidad procedentes de fuentes de abastecimiento local. El objetivo es establecer acuerdos de fabricación.

Summary:
A French start-up company working on a new concept of wafer based food product is looking for an industrial supplier with a technology to produce large quantity of specific shaped wafers. The company is looking for the wafer production capacity and will provide its own molding and process technology to the partner sought under a manufacturing agreement.

Description:
This French Start-up, award winner of a national food cluster network is developing new food products based on wafer with a specific "cup-like" shape. The company has developed the process and know-how to produce the wafer from the raw material as well as the specific mold to be used. However it lacks the technical equipment and production capacity and is therefore looking for an industrial partner with that capacity.

The partner sought should be already producing wafer at industrial scale using equipment such as baking ovens designed for the fully automatic industrial production of rolled wafer cones for ice-cream (like CAIMAN series from Haas or similar).

A set of technical specifications are detailed below.

The partner sought should prepare the dough and a visual inspection of the products is required by an operator before conditionning. Raw material should also fulfil local sourcing and quality in particular use of fresh eggs and butter.
The company will provide the mould.

A particular attention will be made on the quality, process good practices. Quality control procedure will be provided by the company to the partner.

A manufacturing agreement is sought.
Technical Specification or Expertise Sought:
Production materials required at the partner´s facility
- A dough mixer
- Baking hotplates for waffles with at least 200 mm diameter. These plates should be polishable in order to engrave a new pattern for different use, and fit with dough dosing and plate closing guide
- A gripper to catch the wafer and move it
- An embossing system with moulds to shape the wafer
- A cutting system for the wafer in order to get sharp edges
- A temperature control system (two cycles 45° / 29°) and a chocolate spraying system for inner topping at 31° of the wafer. Optionnaly this equipment can be added if not already existing
- A cooling system able to reduce the product temperature from 31 to 10 ° C in 2 minutes

Production speed should be at least 2000 units per hour in order to produce 5 millions units a year. The starting production will be at a rate of 1 million unit a year (first order of 80000 units) going up to production speed within a few months.

Storage should be dry warehouse at a stable temperature of 25 °
