Un científico polaco especializado en tecnologías para la industria alimentaria ha desarrollado un modificador bioactivo de atmósfera para alimentos envasados compuesto por levadura, un medio para levaduras, bacteria de ácido láctico, azúcar y un activador del crecimiento de bacterias. El consumo de oxígeno microbiológico y la formación de dióxido de carbono y etanol permiten mantener la frescura de los alimentos envasados durante más tiempo. El uso de ácido láctico aumenta los efectos inhibidores del CO2 en el crecimiento de microorganismos patógenos. El científico busca socios con el fin de establecer acuerdos de licencia o comercialización con asistencia técnica.

A scientist from Poland has developed a bioactive atmosphere modifier dedicated for packaged food. The compound that consist of yeast, medium for yeasts, lactic acid bacteria, sugar and bacterial growth activator causes oxygen consumption and formation of carbon dioxide and ethanol. In effect, freshness of the packaged food is extended. Cooperation in a form of license agreement or commercial agreement with technical assistance is offered.
Description:
The scientist from North West Poland specialising in technologies for food industry has developed a bioactive modifier of atmosphere for packaged food.

The modifier has a compound form. It consists of yeasts, lactic acid bacteria, sugar and bacterial growth activator. By microbiological oxygen consumption and formation of carbon dioxide and ethanol it extends freshness of the packaged food. The use of lactic acid enhances inhibiting effects of CO2 on pathogenic microorganisms growth. Compared with compounds that utilise only yeast and sugar, the modifier with lactic acid bacteria produces greater volume of the atmosphere modifying gases.

Partnership in a form of license agreement or commercial agreement with technical assistance is offered. The scientist would like to cooperate with companies from food industry interested in and ready for introducing the technology into their production processes.
