El laboratorio ofrece tecnologías de procesamiento de carne para obtener alimentos de valor biológico: carne fresca, productos duraderos y semiduraderos y carne elaborada según una tecnología especial. Se buscan socios con el fin de establecer acuerdos de comercialización con asistencia técnica o acuerdos de colaboración para investigación y desarrollo de tecnologías de procesamiento de carne.

A Serbian laboratory specialized in meat processing and analysis of meat products offers its technology to the producers and slaughterhouses. The laboratory is offering meat processing technology for obtaining of biologically valuable food: fresh meat, semi-durable and durable products, and products made according to special technology. They are interested in a commercial agreement with technical assistance or collaboration research and development of meat processing technologies.
Description:
Serbian laboratory with long experience in meat processing and analysis of the quality of meat and meat products offers technology and know-how it has developed to meat producers and slaughterhouses in European countries. An experimental slaughterhouse exists within laboratory for demonstration purposes with products from the program of biologically valuable food: fresh meat, semi-durable and durable products, products made according to special technology of the Institute.

The laboratory performs also comparative studies for improvement of the quality of meat and meat products in its chemical and microbiological departments - determination of water in meat and meat products, fat in meat products, mineral matters in meat, pigments in meat, pH value of meat, water binding capacity of meat, hidroxyproline in meat and meat products, tryptophan in meat and meat products, NaCl, phosphates, and nitrites in meat products, muscle tissue thickness, acidity degree of fats, peroxide lipid value, iodine lipid value, softness of meat, genetic variants of hemoglobin in blood of sheep and cattle, genetic variants of transfer in in blood of sheep and cattle, and isoelectric focusing of poultry meat extracts.

Current and Potential Domain of Application: Finally laboratory is offering technical assistance, studies and auditing of meat processing technology. An experimental slaughterhouse exists within laboratory for technology demonstration purposes.
